Ingredients-
1 Cup + 2 Tbsp Flour
1 Tsp Baking Powder*
3 Tbsp Cocoa Powder
1/2 Cup Powdered Sugar
1/2 Cup Chocolate Chips or Chunks
1/2 Cup + 2 Tbsp Soy Milk ( or any other plant based milk)
1/2 tsp Baking Powder*
1/2 tsp Vanilla Essence
1/4 Cup any Neutral Oil (we used sunflower oil)
* the baking powder is to be added at 2 different steps.
Procedure-
Preheat your oven 200°C for 10 -15 minutes. Grease 9 muffin moulds.
In a bowl, sift the flour, cocoa powder & baking powder. Mix it until well combined.
Then, add the powdered sugar & chocolate chips and give it another mix.
Next in a mug or a bowl add the milk, baking powder and give it a stir, then add the vanilla essence and mix it again.
Finally add the oil and give it a final mix.
Back to the dry mix add the wet mixture and mix it until it forms a chocolate batter. Do not overmix.
Pour your batter in the moulds and bake it in the oven for 20 minutes.
For optional decoration melt some chocolate and drizzle it on the cupcakes.
