Cherry Crumble Bars Made Vegan

Do you like some crunch with cake? Well then this recipe is for you. These bars have a

crumbly top and a sponge base with streaks of jam inside.


Ingredients-

For the Topping-

  • 2/3 cup Flour

  • 1/4 cup Oats

  • 1/4 cup Sunflower Seeds (optional)

  • 1/3 cup Sugar

  • 1/4 melted Vegan Butter or Coconut Oil

For the Sponge-

  • 1 + 1/4 cup Flour

  • 1 tsp Cinnamon Powder

  • 3/4 tsp Baking Powder

  • a pinch of Salt

  • 1/2 cup + 2 tbsp Caster Sugar

  • 1/3 cup Milk

  • 1/4 tsp Baking Soda

  • 1/2 tbsp Vinegar

  • 3 tbsp Melted Butter or Oil

  • 200 ml (almost 1 cup) Sour Cream

For the Filling-

  • Strawberry / Cherry Jam (or any jam of choice)


Procedure-

  1. Preheat the oven to 180°C for 15 minutes and grease a 8*8 inch tin

  2. In a bowl, sift the flour, then add the oats, sunflower seeds and sugar. Mix it up.

  3. Melt the butter or oil and slowly pour it on the flour mixture.

  4. After everything is well incorporated, toss the mixture in the fridge.

  5. Now for the sponge, sift the flour, cinnamon powder, baking powder and salt in a big bowl.

  6. Stir in the sugar and mix again.

  7. Now in a bowl, add the milk and baking soda. Mix it up and then add the vinegar and mix again.

  8. Next, add in the butter, give it a stir, add the sour cream and give it a final stir.

  9. Pour the wet mixture to the dry ingredients and mix that till it is a smooth batter.

  10. Spoon the mixture in the tin and flatten it doen so that it's smooth.

  11. Pour some jam on the sponge batter till it has formed a good layer.

  12. Break down your topping mixture which ha been in the fridge into small bits by hand. Add that on top of your jam so that it forms the third layer.

  13. Bake it for 40 minutes at 180°C. After it has baked let it cool and the remove it from the tin. Cut it into 12 bars and your cherry crumble bars are ready.
