Vegan cashew ice- cream

Ingredients:

1/2 cup cashews

1/2 cup water(round 1)

1/2 a cup of granulated sugar

1/2 cup water(round 2)

1/4th cup dairy free butter

1/4the cup coconut oil

1/4th cup high fat coconut milk

1 teaspoon vanilla extract

any berries of choice


Method:

1. Soak the cashews in water(round 1) in a bowl overnight.

2. In a saucepan take sugar and add water(round 2), lactose free butter, and coconut oil. Mix it up and heat it on the stove till the sugars melted.

3. In a blender, blend together the cashews soaked in water(withe the water it has been soaking in) till it has a pasty consistency.

4. Strain the cashew mix.

5. In a blender, add the coconut milk, any berries of choice and cashew paste.

6. Blend it up

7. Then add the sugar mixture and blend it up again.

8. Take a container and put the mix in. freeze it for 6-8 hours.
