Ultra Delicious Lemon & White Chocolate Chip Cookies!

Ingredients-

  • 1 lemon

  • 1/3 cup vegan butter

  • 1/3 cup caster sugar

  • 1/3 cup brown sugar

  • 2 tbsp almond milk (or any other dairy free milk) + 1/2 tsp baking powder

  • 3/4 cup flour

  • 1/2 tsp baking powder

  • 1/2 cup white chocolate chips


Procedure-

  1. Preheat the oven to 180°C and grease a baking tray.

  2. Grate a lemon to optain it zest, then cut it in half and squeeze out its juice.

  3. In a big bowl, add the lemon juice, vegan butter and both the sugar's. Whisk it up.

  4. In a small bowl with the milk, add the baking powder and wait till it foams up.

  5. Add the milk mix in the big bowl and give it a stir.

  6. Next, add the flour and baking powder and mix it up to form a dough.

  7. Finally add the chocochips and mix again.

  8. Since these are tiny cookies, using a 1 teaspoon measurment scoop out the dough onto the baking sheet. Press down the cookie dough to form a cookie shape.

  9. Bake the cookies at 180°C for 15-20 minutes or until golden brown.

  10. Optionally melt some extra white chocolate and using spoon drizzle it across the cookie.

  11. Your cookies are now ready so have a bite and let us know how you like it.
