Summer Classic Mango Cake

Ingredients-

  • 1 ½ cup or 217 grams flour

  • ¼ teaspoon salt

  • 1 tablespoon or 10 grams cornstarch

  • 1¼ teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon vinegar or lemon juice

  • 1/3 cup or 68 ml oil

  • ¼ cup or 47 grams caster sugar

  • 1 cup or 265 ml Mango Puree

  • ½ or 115 ml cup dairy free milk (we used almond milk)

  • 3 tablespoon water


Procedure-

  1. Preheat the oven a 180°C for minimum 10-15 mins. Grease a 8" baking tin.

  2. In a bowl, sift the flour, salt, cornstarch, baking powder and baking soda.

  3. In another bowl, add in the mango puree, caster sugar, oil, vinegar and dairy-free milk. Mix it up using a whisk till everything is well combined.

  4. Add in the dry ingredients to the wet ingredients mixture in two parts to form the batter.

  5. Next, add the water and mix again. Do not overmix. Note that the batter will be not of a flowy consistency.

  6. Add the batter to the tin and bake it for 30 minutes or until a toothpick comes out clean.

  7. Let the cake cool for 10 minutes. Decorate the cake according to your choice or eat it plain, either ways it tastes delicious.
