Soft Centered Choco Lava Cookies

Ingredients-


For the Cookie-

  1. 1/3 Cup Chocolate

  2. 1 Tbsp Vegan Butter

  3. 2 Tbsp Dairy free butter

  4. 1/2 Tsp baking powder

  5. 1 Tsp Vanilla Essence

  6. 1/4 Cup Sugar

  7. 1/2 Cup Flour

For the Ganache -

  1. 2 tbsp chocolate

  2. 1/2 tbsp vegan cream (we used coconut cream)


Procedure-

  • In a big bowl, add the chocolate and the butter. Microwave it for 30 secs so that the butter has melted.

  • In the bowl with the dairy free milk, add the baking powder and give it a mix.

  • Next, add the vanilla essence and mix again.

  • Back at chocolate mixture, add the sugar and mix until the sugar dissolves.

  • Then, add the milk mixture and mix again.

  • Next, using a sift, sift the flour and mix it using a spatula until everything is well incorporated. The dough might stick to your hands but thats okay.

  • Transfer the dough to a small bowl and cove it with a cling wrap. Refrigerate the dough for an hour.

  • While the dough is in the fridge, lets make the ganache.

  • Add the cream to the chocolate and microwave it for 20 seconds, give it stir and microwave it for another 20 seconds, give that another stir and finally microwave for the last 20 seconds and give it final stir.

  • Freeze this mixture until it is hard.

  • After all the freezing process, roll the dough into a ball and preheat the oven to 170°C for 10-15 minutes.

  • Take a small part of the dough and form it into a circle and make a hole right in the middle, take a small spoon of the ganache and add that in the hole. Cover the ganache with some extra dough and and roll it again.

  • Repeat the process for the next 9 cookies.

  • Now, on a plate/tray, sprinkle some sugar and roll the cookie dough balls in it until it is coated with a thin layer of sugar.

  • Bake these cookie for 10 to 12 minutes at the same temperature.

  • After baking, let them cool on a wire rack and then have bite.
