No Sugar Healthy Chocolate Ragi Cake

Ingredients-

  • 3/4 Cup Flour (we used whole wheat)

  • 1 Tsp Baking Powder

  • 3/4 Cup Ragi Flour (Nachni ka Atta)

  • 1/2 Tsp Baking Soda

  • 2 Tbsp Cocoa Powder

  • 1 Cup Jaggery

  • 1/3 Cup Vegan Curd (we used homemade peanut curd)

  • 2/3 Cup Melted Vegan Butter or Oil

  • 1/2 Tsp Vanilla Extract

  • 3/4 Cup Any Dairy Free Milk (we used Almond Milk)

  • 1/2 Tbsp Vinegar or Lemon Juice


Procedure-

  1. Preheat the oven at 170°C for 15 minutes .

  2. In a big bowl, sift the flour, baking powder, ragi powder and baking soda and cocoa powder. Mix it up until it is all well combined.

  3. Then and the jaggery and give it a mix again.

  4. Now, ad the the wet ingredients, starting with the vegan curd, vegan butter or oil, the vanilla extract, almond milk and vinegar. Give it a mix till it all well combined and has no lumps.

  5. Now, Grease a 7-8 inch baking pan with oil (about 1-2 tbsp) and then take some flour (about 2-3 tbsp) on the pan and dust it off. (Refer the video for details)

  6. Bake the cake in a preheated oven for 25-30 minutes at 170°C.

  7. Optionally decorate your cake with some Mango Glaze and you health Ragi Cake is ready.
