Ingredients-
1/2 cup vegan butter
1/2 cup caster sugar
1/2 cup brown sugar
1 tsp salt
2 tbsp almond milk + 1/2 tsp baking powder
1 cup flour
1/2 cup cocoa powder
1/4 tsp baking powder
1/4 cup vegan butter
1 cup caster sugar
1 tsp vanilla extract
1 tbsp any diary free milk.
Procedure-
I) Making The Cookies-
In a big bowl cream the butter, caster sugar and brown sugar. Then add vanilla extract.
In another bowl with the almond milk, add the baking powder and wait till it foams. Then add it to the butter-sugar mixture.
Now, Sift the flour cocoa powder and baking powder.
Mix it up using a spatula till it formas a dough. Wrap the dough in cling film and refridgerate it for 35-40 minutes.
Roll out the dough and cut out circles. You could use a shot glass as a cookie cutter.
Bake your Oreos in a preheated oven at 160°C for 15-18 minutes.
II) Making The Cream
In a bowl cream the butter. Add in the sugar and whisk again
Next, add the vanilla and any dairy free milk and mix again.
III) Assembling the Oreo
Take one cookie and some cream on an offset spatula.
Spread the cream on the cookie and take another cookie to complete the sandwich.
Repeat the same for the rest of the cookies and your oreos are ready.
