100% Super Fluffy & Soft Whole Wheat Bread

100% whole wheat bread that fool proof. This is the recipe you need. Although making wholemeal bread seems difficult because wholewheat is so dense, follow this recipe because once you make you won't need any other recipe.(This Blog is only sharing the recipe, please check the video as it is made super detailed and should chear all your doubts.)


Ingredients-

Part 1- (making the sponge)

  • 2 cups Whole Wheat Flour

  • 2 tbsp + 2 tsp Vital Wheat Gluten

  • 2 tsp Instant Yeast or 2 1/2 tsp active dry yeast (if you are using active dry, you will need to activate with the water and 1 tbsp honey and then add it in the dough.)

  • 1 + 1/4 cup Water

Part 2- (making the dough)

  • 2 tbsp + 2 tsp maple syrup/ sugar/ honey

  • 2 tbsp + 2 tsp oil

  • 2 tsp vinegar/ lemon juice

  • 1 cup Whole Wheat Flour

  • 1/2 tbsp Salt


Procedure-

  1. In a big bowl, add the flour, gluten and yeast and mix it up. Then add the water and form into a dough which would be super sticky. Let that sit for 10 minutes.

  2. After the sponge is ready, add the oil, honey, lemon juice, flour and salt. Mix it up and form it into a dough.

  3. Knead the dough for 5-7 minutes and don't use more that 1/4 cup flour while kneading. If it is still sticky, take some oil on the countertop and knead. Do not over knead.(check the video on YouTube)

  4. Test the using the poke test, if it springs back, you are good to go orelse continue kneading.

  5. Proof the dough for the 1st time just for 15 minutes, maximum 20 minutes.This is just to sctivate the yeast.

  6. Now, punch the dough and flatten it down. Roll the dough using your hand forming a oval- rectangular shape.Tuck the sides in and then roll it in a log. Pinch the ends of the log.

  7. Place your log in a greased bread tin. Let is rise for 30-40 minutes. It is very important to not over proof it, check the video for futhur details.

  8. Bake your bread for 30 minutes or until a toothpick comes out clean.

  9. Remove the bread from the tin before it cools down. Ater the bread is cooled, cut them in slices and you have a super fluffy bread ready.
